20 oz. flour (12 oz GM bread flour & 8 oz AP Ultra Grain flour)
12 oz purified water (~100 degrees F)
1/2 tsp of IDY
2 tsp of oil (1 tsp EVOO & 1 tsp Canola)
1 tsp of honey
3 tsp of sea salt
Mixed water and yeast
Added water and yeast mix to flour
Added oil, honey, and salt
Stirred, stirred, and stirred
Kneaded by hand 12 minutes
Fermented in fridge for 3 days
Room temperature rise for 4 hours
Deflated and divided in 2 balls
Fridged for 2 hours
Room temped for 2 hours
Cooked for 8 minutes at 540 degrees F on stone
Verdict - The dough was easy to work. It smelled great. The taste was perfect, and the crumb was good. Unfortunately the chew was terrible, mostly like tough leather.

My hat is off to everyone that took the time to vote. You and I share common ground, even if we voted for different people, ideas, etc.
I love it when I look in the dictionary for a favorite word and it tells me that a definition, or the word itself, is archaic.
Depressing, or our politicians are not being honest -
Be honest with me. Tell me, “You won’t get Social Security or Medicare when you are old, but we’d like you to continue to pay into it to take care of those that need it.” And then, after you have been honest with me, let’s fix the programs or get rid of them for my generation.
